Can anyone think of any novels written in the form of letters, emails, messages etc that have been published in the last 10 or so years?

I can only think of Where D'you Go Bernadette

Have you looked at the novels by Janice Hallett? The Appeal, the mysterious case of the Alperton Angels, and the Twyford Code are all written in that form.

His Bloody Project is I would say similar to an epistolary novel - it's written as transcripts of various historical documents including I believe some letters. Published in 2015 and very good.
