Definitely not high brow or challenging but if I like easy reads like Trisha Ashley can you suggest any similar authors / books

Not familiar with that writer but Lissa Evans is a good and not too demanding read

I have enjoyed lots of Heidi Swain books - cosy community with some romance.

Also Tracy Rees has some similar quite well written village life with a little romance books.

I think Saving Missy and Em and Me both by Beth Morrey might be worth a try.

I'm reading a book called 'secrets at the last house before the sea' by Liz Eeles
It's an easy, holiday type read and enjoyable page turner so far!

Veronica Henry. Try her Beach Hut series first

I love Jenny Colgan - Rosie Hopkins Sweetshop of Dreams is lovely and there's a series as there are with Beach Street Bakery and the ones on an island in Scotland (Mure?). Heide Swain is also good and Veronica Henry.
If you like quirky and heavier on the romance, go for Annie Darling's books about the bookshop but you need to read in order.
I also really enjoy Beth O'Leary's books. I liked Katie Fforde but have gone off her recent books but the older ones are contemporary to Trisha Ashley's older books.
