I've just bought the last trilogy for my kindle (fitz and the fool trilogy) and I'm already dreading finishing them!
I've been reading them all for ages and loved them.

Any suggestions for another long series I can lose myself in?

If you haven't read them, the first 2 books of Patrick Rothfuss' Kingkiller Chronicles trilogy. My favourite books in the world. Worth it even though we're still awaiting the long-overdue final book

Also Brandon Sanderson's 'Stormlight Archive' series - really good, long and very original I think.

Lois McMaster Bujold's The Curse of Chalion or Beguilement, or A natural history of dragons by Marie Brennan.

I felt just the same and I've not yet found a fantasy writer I love as much. I did enjoy the Rothfuss books a PP mentioned.

Robin Hobb also writes as Megan Lindholm. Have you read the soldier son trilogy, the rain wilds and the live ship trilogies?

Have you read Brandon Sanderson? Supposed to be a great fantasy author and has amazing world building. I recently read The Priory of the Orange Tree by Samantha Shannon which is a great book too, great world building and epic plot. I'm currently reading reading Throne of Glass series by Sarah j Maas but maybe not your taste. Still really good though.

I've read the rainwilds and live ships. Not soldier son.
Will check out Brandon sanderson too.

Other ones I've enjoyed over the years have been all of the David and Leigh Eddings series (belgariad, Mallorian etc), the wheel of time series by Robert Jordan was fabulous too.
Also the deverry books by Katherine Kerr.
