Big Girl Panties by Stephanie Evanovich. It's not very good chick-lit but does cover the subject of weight loss quite well in the beginning.

Wally Lamb - She's Come Undone. Brilliant and very well written book about an obese girl in US. A coming of age book. I couldn't put it down.

Sarra Manning's "You don't have to say you love me" is a really enjoyable read. The main character has lost lots of weight when the book starts and the author portrays her mental adjustment well (she still thinks of herself as much larger than she really is) If I remember correctly Manning herself has lost a large amount of weight, it might be worth checking out some of her other books as well.
