Simon R Green - the Nightside series.
Riftwar - the first trilogy of Magician, Silverthorn, and A Darkness at Sethanon, and the Mara trilogy - Daughter of, Servant of, and Mistress of the Empire.
The ones he wrote later just aren't as good, but those six are fab. By Raymond E Feist.
John Scalzi - the Old Man's War series are good too, they're more "hard sci-fi" than fantasy but a cracking read.

Ben Aaronovitch's magic London coppers books are good. Second Neil Gaiman, Terry Pratchett (actually you can't go wrong with Good Omens, their collaboration) and Tom Holt.
