To say he is prolific would be a huge understatement so where would you suggest i start?

It depends on your particular taste. In broad terms he has written fantasy, science fiction, literary fiction, and non fiction. All his fiction is interlinked.

If it is fantasy you enjoy there are a number of major series - Elric, Corum, Hawkmoon.

Science fiction constitutes some of his earlier work, books like The Black Corridor, The Fireclown, and so on.

More literary work veers from his great 60s creation Jerry Cornelius through to his master work, the novel Mother London.
