Banana pancakes

I tried to make these this morning and I ended up with a scrambled mess! What am I doing wrong? Any tips?

I love banana pancakes but also found they turned out nothing like an actual pancake!!!

I now follow this recipe and cooking method which means I cook it as a banana cake on the day before I want it. I then just reheat in the microwave for 1 minute before serving with Skinny Syrup and stewed fruit:-

2 mashed bananas
60g oats
2 eggs
2-3 Tablespoons of FF Nat Yoghurt
Good sprinkling of mixed spice

Mix all ingredients together and pour into a silicone cake mold I use one like this

Bake in oven (Gas 5) for 15 mins.

When cool cut into 2 pieces and reheat when required.

Overall recipe = 6SPs
Per serving = 3SPs

I use the mould and just use 2 eggs & banana (key I think is to blend with a stick blender) and bake. I don't find the need to add oats or anything - just don't fry them!

I tried these, fried. I only used one egg. I made them very small, about 2-3 tablespoons. I waited until they’d set and bubbled before flipping them and used a very flat spatula to flip them.

But I think I’d rather eat a boiled egg followed by a banana Grin

I love the following: 1 banana mashed a lot with 1 egg mixed in and then a drop of vanilla essence with a little bit of cinnamon mixed in, use a spoon to make about 4 small pancakes out of this on a frying pan (using a small amount of coconut or other oil). Because pancakes are small but they’ll cook better and be easier to flip. Have a side of fage 0% yoghurt and blueberries - lovely meal and very low points!

I’ve been making a batch of these on sundays and keeping them in the fridge to take to work for snacking during the week and I find they turn out well! I do make them small, like scotch pancake size, maybe that helps? I usually use 3 bananas and 5 eggs, a large pinch of bicarb, a good shake of cinnamon and use my stick blender to whizz it to a batter. I fry them using a couple of sprays of fry light.
