Lunch ideas

Hi

Does anyone have any good weekday lunch ideas? I work in an office and in general it's easier to take things that don't need heating up as I don't always have access to a microwave. I've been advised to avoid wheat so in general I take salads but as I explained on another thread at the moment I am finding it difficult to work out how I can use up all of my points and salads will be low in points - does anyone have any other ideas?

I don't generally have any problem with using all my points, but I do try to make my lunchbox salads a bit more interesting. Today I had chicken and bacon (2 points for the chicken, 2 for the bacon for 2 medallions) and I sometimes also chop in a bit of fruit. Do you eat nuts? could you add some to a salad to use up your points? Salmon is also good - and higher in points. One of my favs is cauliflower rice mixed with peas (or brown rice which is higher if you can have that) with salmon on top and drizzled in sweet chilli sauce - that's about 7 points with the cauli rice or 12 with the brown rice. I usually have it for dinner one night after the gym and then take the leftovers for lunch the next day - tastes just as good cold.
