My favourite is paella - totally delcious and has been highly praised by friends who didn't know they were eating diet food!
I buy Spanish Paella Rice from Tesco and roughly follow the recipe on the back.
In summary:
Finely chop an onion and 3 cloves of garlic -sweat these down (in frylight or, as I do, for 4 mins in the microwave - covered and with a tbsp of water).
Add to frying pan: 2 roughly chopped tomatoes, 1 red pepper cut into strips and some raw, skinless chicken (breast or thigh works fine), and 2 tsp paprika. Cook for 10 mins until chicken is cooked.
Add 300g paella rice - stir to coat and cook for 4 or 5 mins.
Add a large pinch of saffron and 2 pints of chicken or veg stock. Season, bring to the boil and simmer for 20 mins, stirring from time to time.
Add a packet of frozen and defrosted mixed seafood (the sainsbury's prawn, squid and mussels are great) and some frozen peas and cook for a further 4 mins or so, until the peas and seafood are hot. When I did this for friends, I added some cooked whole cevettes and cooked shell on mussels - which did give it some extra impact.
Serve with salad, chopped parsley (if you like it - I don't!) and wedges of lemon.
