Low carb and vegetarian

I'm going to do a low carb diet. Cut out bread, potatoes and rice. I'm also Vegetarian and so will be thinking of interesting things to do with tofu, eggs and cheese (I was thinking of allowing myself beans and stuff but not sure). Anybody want to join me for motivation and meal ideas. You don't have to be veggie just want to talk about a few vegetarian options, adaptations.

I have 2.5 stone to lose to be where I want to be (which would not be skinny but maintainable as I like my food). Got a 9 month baby and so don't have a huge amount of time to focus on food in the day. Anyway would love some help and chat and laughs.

Oh being veggie on a low carb can be hard but can be done - just needs lots of motivation and creative thinking!

Don't forget that soya / quorn are lowish carb too.

Roasted med veg is low carb, leeks and mushrooms in a cream cheese sauce is nice and mushrooms stuffed with quorn pate topped with cheese is yummy and substantial as well as baked eggs and spinach

Thanks LimaCharlie. I am ashamed to say that I didn't last the day. I felt awful and remembered how crap and grumpy it makes me feel and I just couldn't face it on top of looking after the baby. So have started low fat (WW without the meeting).

I think it is the better way for me to go at the moment. Low carb was possible when I had a lot of time to devote to myself. Anyway off to the gym later so that will help.

Not sure if your dieting too but good luck to you with what you are doing.
