I'm also eating 1200 a day, but only for 2 weeks (over half way through now), and will then eat 1400 a day.

You can buy calorie counting books or look online. You will need to way your food and then do a bit of maths. I have a set of scales which can calculate calorie value which are very useful.

The Daily Plate found on Livestrong.com is a food diary, it calculates everything for you & you can even add your own recipes, exercise taken, water drunk, etc, etc. Makes it easy to keep track.

In terms of what to eat; loads of fresh fruit, veg & water to fill you up before you reach for the Galaxy bar! Brown rice/pasta/bread instead of white. Fish. Avoid too much red meat. Lentils, pulses, beans, etc (E.G. three bean spicy stew / lentil soup) for healthy protein.

Good luck.

I use foodfocus.co uk to track my cal intake and log foods. It works for me better than sw or ww.

Chicken breast roasted without skin is around 149 cals per 100g.
