i'm calorie counting at the moment, but boring lunches are letting temptation creep in.

i'm having things like rice cakes with cream cheese or cottage cheese, salads and steamed/boiled vegetables, fruit, yoghurt.

i like soup, but have to have bread with it, and i'm trying to really cut down on bread for a while.

need some inspiration, please help!

bread really isn't your enemy!

pitta bread (warm) with tuna and beetroot. (my favourite sandwich of all time!)

Instead of bread use tortilla wraps.

cold rice salad with veg (if you are lazy like me just buy the bags of frozen mixed veg which are cubed)

the same as above but with couscous. Add some cold grilled chicken (no skin!)

salad with boiled eggs and tuna (lazy persons tuna nicoise)

how about some raw veg? strips of red/yellow/green pepper with a small amount of hummous.

What are your favourite things? Take a close look and just strip the extra calories out.

You say no bread but how about an open sandwich? Or try something like rye bread with your soup.

Do you have a microwave at work? If so how about baked potatos?

thanks!
i hate having to 'cook' lunch, so they sound good.

just cutting down on bread, dont think i could rule it out completely.

not at work, sahm now, so thats why i put the weight on. work gave me more structure around food and meal times, and a good distration from food!

I love an easy quiche that I used to have whilst on slimming world, DH loves it too:

Tub of cottage cheese, 3/4 eggs, then whatever you want to put in, I like roasted peppers, ham,red onion and mushrooms. You could also put in salmon or tuna.

Put the veg/ham into the bottom of a ovenproof dish. I like to add fresh herbs and some garlic too.
Whisk the eggs, add the cottage cheese and pour over. Bake for about 20mins.
Serve with green salad, and/or potato wedges (done in Frylight or similar).
It is just like a quiche without a pastry base, filling and v low cal.

Lentil soup is filling.

Lentil dahl with cous-cous.

I love that Quiche recipe Lizzylou, will give it a try.
