A thread for all us GI diet followers (and anyone interested in it).

If you have any yum recipes or tips to share, please do .

If you have any questions about following a GI diet, there's bound to be a Mumsnetter who knows the answer .

I'll be posting my progress on the thread weekly - if anyone else wants to - great!

This is from "Fat Girl Slim" by Ruth Watson.

Yoghurt Marinated Chicken

Serves 2

1 garlic clove
crushed and finely chopped

good pinch each of ground cumin and ground coriander

small pinch each of turmeric and chilli powder

2 chicken breasts

a little olive oil

Mix the yoghurt, garlic & spices into a thick paste. Slash each chicken breast a few times & massage in the paste. Leave the breasts to marinate for 2 -6 hours.

To cook, place a non stick frying pan over a medium flame and, when its hot, add a drop of oil. Scrape off excess marinade from chicken, then fry breasts for about 4 mins without disturbing them. Turn the breasts, lower heat and continue to fry for 6-8 mins, or until the chicken is nice and crusty looking and the flesh is cooked but juicy.

I serve this with some basmati or brown rice - made more interesting by frying some spring onions, ginger, garlic and red pepper, tossed into the rice before serving. I've also done it with a big salad - also yummy.

mushroom and bean ragout (sorry if someone has posted this below, can't scroll thro 300 + posts!)

onions, celery, garlic, one carrot, chopped and sauted in a little oil until golden along with teaspoon of paprika, salt and pepper.

two tins of beans (kidney he says, i say whatever, and even better and cheaper if you use dried ones soaked overnight). pack of mushrooms chopped. add in. two tins plum tomatoes (chopped/unchopped whatever). stock cube and some water.

kept it on hob most of today on low simmer until thick and lovely. absolutely delicious. fed me and dh and more than enough to freeze some and use with pasta (we had with rice tonight) eg instead of meat bit in lasagne.

also he does recipe for wholemeal pizza base and you could use this as topping....

just hope that i lose some more this week (wasn't v good at weekend)

For anyone who likes spicy things, can I recommend jerk seasoning (if you haven't already tried it).

I bought some jerk seasoning in Tesco and made some jerk chicken last night - wow, it was delicious.

You need to marinade the chicken in the seasoning, mixed with some oil, for a couple of hours. I reduced the amount of oil it suggested to keep the fat content down. Then I cooked the chicken in a frying pan, adding some red peppers and onion. Delicious.

puff i haven't lost any more weight this week despite not drinking alcohol and being good all week. i'm hoping it's cause i'm premenstrual (tend to bloat before period), but i'm feeling v v disheartened...and will probably have a bottle of wine tonight

sophable, I pretty much stay the same in that week before my period - don't lose heart hun. Then I find I get quite a big loss in the week after.

"Easy GI Diet" by Helen Foster is pretty good Marslady - lots of meal ideas, most are fairly straightforward.

Marslady - I got mine from Amazon.

Eg of meals:

spicy lentil and tomato soup
pan fried lamb with spiced flageolet beans
herby lentil salad with bacon
pork balls with tomato sauce and spaghetti
cod in parsley sauce
gammon steak with creamy lentils
teriyaki salmon on noodles
griddled chicken with pearl barley
vegetable curry
aubergine lasagne

My sister is up and down tbh - no definite diagnosis of lupus - consultant decided she was "borderline", but she's having really bad problems with her joints - hands closing up in a claw-like way, difficulty walking some days . She's v fed up - seeing the consultant again in July.

Suzywong - the Helen Foster book gives you meal plans and the recipes. As well as the diet plan there is a maintenance section too (and a plan for vegetarians).

Glad you liked it GF - the "Fat Girl Slim" book that it came from is really good - not a GI recipe book, but plenty of meals that can fit into it.
