I am attempting a glow up after a couple of years of weight gain and general neglect. I want to lose some weight but concentrating on nourishment rather than low fat etc. Would anyone have any ideas for lunches I can bring to work and quick dinners? I love tasty food and I look forward to my meals.

there's loads of good recipes on BBC Food. but I follow those and just switched to wholegrain pasta and rice and sweet potato. I lost 5 stone!

For a quick simple dinner I love something like smoked salmon, scrambled egg, big green salad with tomatoes and cucumber. A lunch could be similar but with falafel/sweet potato chunks or cold hard boiled egg.
I love a grilled salmon fillet with lentils and green veg. Or a pitta pocket stuffed with any combination of the above

Honestly - not really. im not into exercise so didnt do that but wish I had doen becasue years later my mental health got so so bad I went into psychosis with stress.

DIet wise, I pretty much cut out refined sugar altogether and only ate my three meals a day. but it was very tasty food. so in a day id have either porridge or seeded toast with peanut butter for breakfast, homemade lovely soup for lunch and then a really tasty meal for dinner with he wholegrain stuff. fruit in between if I wanted it or nuts and seeds. but that was all I did really.

For lunch buy a food flask and take chunky soups - eg minestrone, pearl barley and veg, chicken soup with veg. Or plain veg soup with seeds on top and hard boiled egg on the side for extra nutrients and protein.

Salads in summer - so many options!

Quick dinners

omelette with veg & bit of cheese and a salad
thai curry (using bought paste)
stir fry
escalope, new potatoes and veg

One of my staples is salmon with a few baby new potatoes, spinach and samphire (Tesco sell it). Make a light dressing with capers, garlic, dill, parsley and lemon and a drizzle of oil or a small knob of butter.

Or chicken salad with fennel, with a saffron and orange dressing. Add in some basil and a little fresh chili.

Or the Ottolenghi White chicken with peanut Rayu on shredded cabbage. So tasty and very satisfying.

I've lost loads of weight - not because I wanted to or needed to but for health/medical reasons I was forced to and I discovered it's not about 'low fat' 'exercise' or any other diet fads.

basically you just need to eat less, it can still be tasty but snacks can't be a thing any more. Lovely big roast dinners can't be a thing any more, treats can't be a thing any more.

I basically lived off cuppa soups, toast with jam, salads or pitta breads with chicken breast, sweet potatoes, tomatoes but nothing with cheese, or fat of any kind (cries).

All my diet myths went out of the window. It turns out that eating fresh, homecooked food in small portions 3-4 times a day and drinking pints of water made the weight fall off.

I had no choice as I became very unwell if I didn't stick to that diet. But it worked and I looked great.
