Low carbs.. need to lose at least a stone, advise and support please

Hi. I need to lose minimum a stone as 5ft 1 and currently 11st 3. Almost 50yrs and want to look and feel better. I do sone exercise classes in week, but i think it's diet that makes the difference. I don't quite meet jab requirements, but would be nervous of needing to stay on jabs after losing weight to maintain. I want to embrace low carbs as I'm sure that's my downfall. Any simple meal ideas? Need to take lunch to work and eat family dinners, which makes it trickier. Any got any good ideas or tips. It's all rather egg heavy presently!

My downfall was carbs too, I got to 13st at 5ft 3" and was obese bmi 32.4, I'm now 10st 0.5lbs bmi 24.8 but I am on mounjaro as I was also prediabetic and tried hard to lose before with Joe Wicks body coach and calorie tracking.
I didn't realise that craving carbs was a symptom of insulin resistance and prediabetes, i also didn't eat meat for 5 years which made it all worse. Mounjaro has corrected my sugars and I don't crave carbs like I used to, potato like chips, jackets, crisps, bread, rice daily.

Yesterday I had grilled bbq chicken, roast sweet potato and stuffed mushrooms. Usually its chicken and mediterranean veg. Occasionally I have chicken and veg curry and a few tbsp rice. If you pack in veg like courgette, aubergine, okra, peppers etc into a curry it bulks it out and is more filling.

Lunch sometimes I make a snacky bento type box so like chicken and cheese slices rolled up, cottage cheese, cherry tomatoes and nuts to snack on or fruit and high protein yoghurt or skyr/Greek.
I've made salads with gem lettuce, beetroot, cucumber, tomatoes, then a protein like tuna mayo, soft/hard boiled eggs or sliced air fried chicken.
Drink plenty of water and this will help with hydration and keeping you fuller. Snack on nuts, yoghurt, cottage cheese etc I have a protein shake for breakfast on work days and clear protein is like juice easy to drink for days when your meals don't have as much protein in. If you track on myfitnesspal that will help with macros and calories.
