Low carb meal ideas please!

I'm dying of boredom. On day 3 of no bread / rice / pasta / spuds. (lost 1lb already!)

Does anyone have any ideas for meals, so that mine don't just look like eggs / meat / cheese on a plate with some green veg. Tis very dull.

Cook stuff like curries, spag bol, shepherds pie but use shredded cabbage, ribbons of courgettes and mashed cauliflower instead of rice, pasta and mashed potato.

Make pizza's using a courgette split lengthways as the base (partially cook courgette first).

Huge salads - I like grilled chicken breast with avocado, lettuce, red pepper, onion and cucumber. Top with lemon juice or home made herby dressing.

Cauliflower cheese with pork chops or gammon.

Spicy mince or chicken fajitas served in romaine lettuce leaves rather than tortillas or tacos.

Butternut squash soup.

Salmon with big dollop of sour cream/chives, asparagus and green salad with caesar dressing

Sausages (good ones, no filler) on bed of cauli mash with onion sauce

Chicken, bacon and peppers stir fry, with parmesan

get a bag of iceland cook from frozen chicken pieces. Fry in a little oil, add garlic, spring onions, mushroom, chopped spinach, greek yogurt, soft cheese, dash of milk if you like. Lemon or lime juice and some coconut.

I found this by accident and love it, cant give you any quantities as I just threw anything in. But have made it loads and it always works. You can make slight variations to this and it will still taste good. Try adding peppers, onions, whatever veg your fancy really.

The great thing is, it is so tasty and you can eat it hot or cold. So make a lot of it eat it hot for dinner and then mix the leftovers into a salad. It's yummy, I have tried this with prawns and white fish also and it still works, but chicken is best.
