Toast for dinner

Hi all just looking for some helpful suggestions.

Im trying to lose a small amount of weight (the last 5 pounds) and try and feel healthier. I’ve pretty much overhauled my entire diet.

Weekdays
fast until 10.30,am then coffee, walnuts and fruit.
1.30pm lunch - either tuna / chicken breast or cheese with salad, cottage cheese or hummus and then berries. Sometimes Greek yoghurt too.
6pm ish dinner - usually toast! Either egg on toast or cheese on toast. Then a handful of strawberries or something.
8pm cup of tea and few pieces of chocolate

Sat / Sunday I just have a brunch (typically eggs, avocado, fried mushrooms, slice of cheese and lots of berries) and then we do have a takeaway / a roast so not perfect either. I think it’s the weekday toast that’s the worst probably.

Any very quick easy ideas for dinner? I find I don’t really eat many other carbs at all!!! But I dislike pasta and rice and find cooking everything else takes too long. I’m gluten free if that makes a difference to suggestions.

How about making a big batch of soup with loads of veg, pulses and/or beans and freeze to eat for dinner with cheese (some types can be nice with an egg microwave poached in it)

Dislike jacket potato and they take agggges to cook!

Soup is a brilliant idea!! I know I’ll end up with tomato soup and cheese on toast haaaa!

Does anyone have any better sides to have with soup?? I can get celery, gf breadsticks or cheese. Perhaps a bit better than toast

Tomato, pepper and lentil soup is delicious and healthy.
Tinned cream of tomato...tasty but not ideal for weight loss or health.

You’re right!! I need to find some good soups. I like lentil soup actually, that’s filling.

omelette is nice but I often make them and throw a slice in for lunch to mix things up. I eat too much cheese probably too.

My friend just suggested eggy bread 😂 which I love but again it’s toast!!! DH suggested cheese salad pittas… but it’s pretty much bread!!

Oatcakes are good with soup. Thick gnarly ones. Put cheese on them if you like!

Ahhh oatcakes, I’m going to have a look for some good gf ones. I bet they do other things I can dip in soup actually if I hunt around. Thank you!
