Quick/minimal preparation low carb lunches

Any suggestions?

Im getting a bit sick of opening a tin of beans and eating a lump of cheese from the fridge.

I used to work in the city and had access to a Pret - they had lovely chicken salads and crayfish salads. I havent got the time to create something like that now, with toddler and newborn at home.

Need instant food. Im not doing an atkins diet, just trying to cut down on carbs at lunchtime- its helped me lose weight in past

Hi

Just did a quick search on Recipe Zaar.com and found 90 ideas for "low carb lunch". Hopefully a few ideas
here. Quite like the chicken mushroom wrap recipe.

Tuna and lettuce wraps?

Mix tuna with mayo (and anything else you like - cucumber/red pepper/chilli, etc)

Take an iceberg lettuce and remove a couple of leaves - dollop a lump of tuna into each leaf and wrap it up.

A bit messy, but lovely - and low carb.

Or - a great fridge standby - hard boiled eggs. And a cooked version:

2 hard boiled eggs, halved. Put them cut side up in a gratin dish, spoon over a couple of tablespoons of full fat yoghurt (Total is good) and top with a generous handful of grated cheese. Grill for 5 minutes until cheese is brown.

buy some lovely smoked salmon fillets and have with some tomatoes and bag of salad and some other salady veg like pepper of cucumber.

same with chicken tikka pieces bought already cooked(I usually find them reduced)
