Ideas for quick meals following binge eating during depression

I've recently been binge eating a lot because I've been suffering with depression. I haven't got it in me to spend time cooking a long meal most days but I'm feeling better and I can concentrate on my eating more. However I still want to eat quick meals and I've forgotten what I could eat.

Tonight I ate a jacket potato, bag of veg cooked in the microwave and half a tin of chunky chicken. It felt good to eat something reasonably healthy and didn't require too much effort.

Have you got any other ideas of super quick/minimal effort healthy meals before I get the motivation to cook better.

Thanks

How about some gnochi which takes minutes to cook and dolmio stir in sauce. You could have that with a side salad to get some more vegetables in.

Well done on recognising your binge eating and making yourself a healthy meal. Huge step. Sorry if it sounds patronising but I've been so down myself and think what you're doing is amazing.

Lentil Dahl is simple and very nourishing as are soups, or a sweet potato, some steamed broccoli and some fish, cooked in the oven with lemon. You're doing so well

Eggs or beans with toast.
Spanish tortilla - can pre cook some veg or potatoes and use, or tinned new potatoes could work too
Egg fried rice with peas and pre cooked chicken or prawns
Filled pasta and a sauce
Tinned sweetcorn always a quick and easy veg

boiled eggs or porridge made in microwave for breakfast
Make a big batch of soup for lunch and make big enough to last a few days
Dinner is panfried or grilled or oven baked chicken or fish with 2 types of veg and a carb if you want. No binge food at home. Delete food delivery accounts.
I would eat the same food rotation for a week, keep meals as simple as possible. I find it easier to eat the same or very similar things. no alcohol.

Prepacked ready cooked rice with some protein and veg. Try and have whole grains or starchy veg rather than refined carbs as they often drive binge eating.

Do you have a slow cooker? Very minimal effort in the morning then dinner ready just when you might be wavering into unhealthy choices
