Tasty, healthy lunches that actually fill you up for vegetarians?

Salad with leaves, grated carrots, cucumber, peppers, olives, apple, beans, dressing, plus pan cooked crispy tofu on top. Add whatever else you have or like- spoon of coleslaw, nuts and seeds, grated parmesan or some feta, sauces etc. If you have a mix of protein, good fats and lots of green leaves that should be a filling lunch. Other options add eggs or tuna (if you want fish)

Roast butternut squash and feta salad.

Vegetable curry, I made one using sweet potato, chickpeas, chopped tomatoes, curry powder and spinach the other day and served it with microwave coconut rice.

BBC Good Food website is good for recipe ideas as you can read the comments at the bottom.

Roast/airfry frozen med veg with spices (fajita mix/Cajun/paprika/harissa) for 15 mins, when cooked pour in cous cous and stock, cover and leave till cous cous is soft, fry some halloumi to go with and siratcha and natural yoghurt on top.

Can of black bean, can of sweetcorn, jar of salsa, sprinkle of fajita mix, cooked quinoa mixed in, makes loads, keeps well, good hot or cold. Guacamole or plain avo on top if you like

Red pepper, spring onions and feta mixed through cous cous with pesto is another that can be made ahead and served hot or cold.

Jacket potato with cheese, onion and salad cream

If you like soup then adding soup mix or brown rice to it really fills you up.

Half a pack of frozen casserole veg mix cooked in stock with thyme, S&P, a bay leaf and a cup of brown rice makes me soup for three lunches. Can add cumin and curry powder before you reheat a bowl if getting bored…

roasted smoked tofu with broccoli and mixed grain - usually quinoa and bulgar or any of those mixed merchant grains.

lentil spaghetti 'bolognese

stirfried chilli garlic pakchoi with noodles (add any protein of choice) egg if you eat it? I like the vivera shwarma pieces

Simple homemade ramen, with a good stir fry veg pack. (the edamame and lemongrass one from Sainsbury's) and quick cook noodles with a low salt soup base powder. chuck a few bits of gilled or roast tofu on top.

i suppose those are maybe dinner-ish but i don't like a cold lunch and usually try to make enough for lunch the next day.

i like that black bean one! I love a loaded guacamole in the summer, the entire kitchen sink with couple of mashed avos is always tasty

I used to have issues with this until I realised it's important to eat enough protein to feel full. Tofu, eggs, high-protein yoghurt etc.
