Water weight

If you lose weight rapidly (say around half a stone in several days due to illness) is your true weight the lower weight because you haven't lost fat, just 'water weight?'

It's mostly water weight. You couldn't lose actual fat that quickly. Once you are better you put back on the weight you lost.

I know, that's what I mean though. Your weight after water weight loss, has got to be your actual body weight?
