I love roasting whole peppers until they're all charred, then peeling off the skin and drizzling balsamic vinegar over them

roasted veg with spray oil, onions, peppers, tomatoes, lots of garlic, courgettes - great as a 'plate' filler with chicken or something

last night I made a completely fat free tzaziki, it was loooovely.

Fat free yogurt,
crushed garlic
chopped cucumber (seeds removed)
fresh mint
squeeze of lemon juice
salt & pepper

diet coke chicken

2 x chicken breasts (cut into pieces)
1 x red onion (chopped)
1 x 330 ml can diet coke
8 x tbs tomato sauce
worchester sauce to taste

fry off chicken and onion in frylight
add coke and tom sauce,
bring to the boil and keep on a rapid boil stirring frequently until the sauce reduces.
add worchester sauce
eat grin
it tastes like barbecue chicken.
the above serves 2 and is 3 1/2 points per portion on weight watchers
