Do you know a tasty low calorie vegetable soup recipe?

I do
Red lentils, tin mixed beans in tomato sauce, 3 carrots, 2 leeks, 3 sticks celery, 4garlic cloves. Add a veg stock cube and a small amount of coriander, Thyme and pepper. Add a big splodge of tomato puree and 1.5l of water.

Cook in slow cooker all day and blend according to preference
We freeze it and it keeps well. No idea about the calorie count but can't imagine it's too high

I med onion.
Small head cauliflower
Ditto broccoli.
chicken or veg stock
Seasoning to taste
spoonful of cream or a handful of grated cheese.
Chop the onion and fry it gently in a little oil or butter
Add the chopped cauliflower and broccoli
Simmer gently in just enough stock to cover until just cooked (don't overcook it)
Add a little cold water to cool it enough to blend.
Add the cream or cheese and stir it in, if necessary heat it gently before serving.
Freezes well.

Frankly the easiest way is to buy any veg you like - I usually stick to carrots, leeks, onions, potato, parsnip - chop it up, boil with veg stock (Marigold vegan stock is my favourite even if you're a meat eater as its really tasty), blend it in the pot with a stick blender and add seasoning to taste. Nice, thick, pure veg soup.

You could add things like red and yellow pepper but I'd cook them in the oven first to sweeten them, the add to the mix at the end before blending. Same for anything like squashes - make sure to deseed and chop before the oven and remove the squash skin.

Oh, and if you prefer a creamy soup, add a few spoons of low fat cream cheese or fat free yoghurt when it's all off the heat.

Thanks for the ideas I will try one a week. This week I have made the spicy cauliflower and will have it everyday at work.
I have also bought the vegan boulion so thanks for that tip.
