What do you do when you reach your target? Scared I might badly relapse!!

Sorry to those who are still working towards their target, but this is a genuine Q, not a stealth boast.
After a few months of careful calorie control/ exercise etc I'm hoping to hit my target weight in about a week's time. I've been following a 500 cal/day deficit plan, so in theory I should be able to up my calorie level again to maintain my weight at my target level.
But I'm panicking that I'm going to go mad/ overload on the things I've missed a bit and pile it all on again!!

If you've lost weight and then maintained it, what's your strategy? Did you keep measuring and monitoring or just do a weekly weigh in etc or what?
