If I do exercise I am soooo hungry. It feels like an uncontrollable hunger and I'm really tired as well.
But I'm trying to eat less and the scales aren't shifting.
I don't know what to do anymore. Feel stumped (and stupid tbh) why I can't seem to lose even a pound. Have been trying for months but still the same weight so I'm doing something wrong. The only thing that's better is I'm no longer putting in weight at least but Ive gone from being underweight to overweight in 3 years and im very depressed now. I hardly leave the house im so ashamed of how I look. Don't know where to go from here.
Any ideas gratefully received!

I don't think eating veg roasted with oil is a problem. Eating unprocessed food cooked from scratch is a good thing. You just need to make sure you are having a sensible portion. Roasted veg and some kind of protein for an evening meal sounds fine in moderation. A couple of squares of dark choc in the evening. Drink plenty of water/ herbal tea. Have a sensible breakfast lunch maybe a piece of fruit and that's pretty good overall. Cake once a week!

So I now own a steam thing found it £22 today!! Bought a lot of veg. Will get practicing tomorrow. Actually excited to use it.

Thanks @Crazzzycat I will take a look. I am happy for anything that helps me get going and I certainly struggle with the cooking.

@cansu good luck! I rarely drink so I'm thinking you can also cut that down. I am literally eating myself to oblivion. I am determined to stop it though.
One thing I do know is that I don't drink enough water. I'll drink two coffees in the morning then a few teas and not much else. Need to get on the water as well.

I’m find resistance band exercises 3 times a week and cardio twice a week works for me. Week days I have meal replacement shakes for breakfast and lunch, with healthy snacks in between ( fruit, low fat option crisps) and a low or no carb dinner. Saturday I’m more relaxed, it’s the only day I allow alcohol and carbs, and Sunday after lunch I will have a desert. This works for me.

OP, my DH also loves cooking, and cooks richer meals than I need and subsequently I have put on weight. I'm struggling at the moment, but 5:2 has helped me in the past, as it is so simple, 2 days a week I fend for myself for those 500 calories. It doesn't really impact him, making him cook what he would see as "diet" food would impact on his happiness as cooking is his destressing time from a difficult job. So, for me 5:2 is workable. Alternatives I have tried is to eat his meals but half sized portions.

As PPs have said it is good that you are getting home made nutritious food, it sounds like you are just getting too much of it. Giving how important cooking is to him, I'd be looking for strategies to work with the way he cooks, rather than in a completely different way, eg 5:2, smaller plates etc.

Can't believe he takes all the best bits out though, that is definitely not on. Very selfish.

Check out operation transformation website. It's an Irish TV program that's helps people change their life style. It focuses on food, exercise and mental well being. On their website they have ideas for food plans and simple exercises. It could be a good starting point.

Congrats @starlightflowers! You don’t have to do it all in one go either. Like chopping the veg after dinner and put in fridge, can stop binging after dinner because you’re doing something, and also when you’re hungry before next meal, as all you have to do is put in steamer and turn the dial.

@starlightflowers that’s fab. Honestly it’s impossible to mess up with a steamer, even if you overcook the veg slightly they are still ok.
Apart from one cup of coffee in the morning, I drink water all day every day and like it. I wasn’t always that way though. My tip for drinking more water is to have a water glass next to you all day (or water bottle in your bag if you are out). As soon as it is empty refill it and take sips regularly. It does help with hunger/ snacking, as does increasing your protein.

I don't like still water so I buy sparkling, add a squeeze of lime and pour a 2.4l jug first thing in the morning which I keep in the fridge and make sure I finish during the day. It's been lifechanging!

Keep exercising, it’s vital for health. However weight loss stems from portion control and counting calories. Ask your DH to give you a much smaller amount.
