Any fussy/picky eaters about?

I'm doing low carb, but I'm sick of eating the same foods day in and out.

Breakfast - Eggs
Lunch- Yogurt with strawberries
Dinner - Variations of chicken breast + vegetables.
Last night I had spicy chicken bake.

I average 1300 cals a day.

If you're a fussy eater, what are your safe foods/meals?

I should add I hate vegetables, so most low carb recipes aren't helpful. l'm not eating corgette linguini Grin

What is it you hate about vegetables? Taste or texture? Is it all vegetables? It could be for some you just don't know how to cook them properly.

Depends on the vegetable if it's taste or texture.

I have a few safe vegetables that I can stomach, Broccoli, sweetcorn, carrots, mushrooms.

I used to find courgettes repulsive but I've discovered that if I make ribbons and fry in olive oil and garlic I really like them.

My diet is similar but don't eat any cooked veg at all, just green salad stuff. So it's berries and yoghurt for breakfast and usually a plain chicken salad with some sort of cheese for dinner.

Snacks - almonds, coconut and a small bit of dark chocolate.
No helpful suggestions I'm afraid, but I can't say I really get bored.

I spiralise veg like carrot and courgette and hide them in Bolognese for my fussy DC. I've also done baked frittata / crustless quiches with tuna / salmon / broccoli etc that they eat.
