Healthy Office Birthdays

Hi All,
We are a very small office and all eating well (or at least better) at the moment.
It's a birthday on Friday and I'd like to arrange a nicer lunch for birthdayee but struggling to think of anything that won't ruin all our diets, mostly theirs otherwise it feels a bit like sabotage!
They do not have sweet tooth anyway and we are all avoiding carbs, I know they are generally calorie counting so nothing too high calorie. We have small office kitchen with a George foreman and a microwave so somewhat limited!

Any bright ideas for a fun birthday lunch that won't ruin diets!?

Sorry good question. I meant things I would take and prepare for all there.

When I say small, there would only be three of us so I'm happy to supply and prepare

Ah, that’s not so many people to cater for. I would go meat and vegetable heavy and move away from starchy/fast acting carbs. For instance:

Pinwheels made with lettuce or dark greens as the wraps instead of tortillas. You could layer meat, cheese, hummus and other vegetables like pepper strips, etc and wrap those then slice crosswise.

Roasted / stuffed butternut squash. Use quinoa, herbs, mushrooms, other vegetables and some nuts chopped together and cooked as the stuffing. Serve it with a light dressing if need be.

Maybe do a winter salad. Kale works well for this especially if you marinate it overnight. Kale, roasted acorn or butternut squash cubes, a bit of wild rice or pearl barley, a few chopped nuts, chicken, and then a shallot vinaigrette. Maybe a bit of shaved Parmesan.

For dessert, I would stick with fruit and/or any lower calorie frozen treats. I really love Oppo ice cream. They have a double chocolate hazelnut flavour that’s to die for. I think it’s only about a 150 calories per serving. You can get it in Waitrose.

I swear I don’t work for them! I’m just diabetic and can’t eat full sugar ice cream all the time and was so happy I found them a few years back!

BTW, returning to your food question, stir frys may be a good option too. Heavy on the flavour but lower on the carbs if you stick with just the meat and vegetables.

Do you all eat meat/fish? I would just bring somr of each in with marinades and chopped peppers/onions and people could make their own kebabs and grill on the George. Serve in lettuce cups with salsa/cheese/crème fraîche.

Maybe make your own salads bring in tuna chicken salad cucumber etc in Bowles

Love the idea of marinaded meats to make kebabs and then maybe lovely salads to accompany
