Help me remember what healthy eating is pleeease!

I feel like I've forgotten how to eat healthily. The last few years have been really difficult. I went from cooking for a family to living alone and catering just for myself but still making huge meals, to being on chemo and surviving on whatever I could make myself eat, through to lockdown during which I've been WFH, sedentary and comfort/boredom eating.
And now I feel like I don't know what a healthy daily menu is for a single person.
Can anyone help? I'm about a stone overweight so would like to lose that over a period of time. I live alone, still WFH, no dietary restrictions, no health issues now and enjoy walking and yoga but not doing enough of either of these.

As much variety of fruits/ veg/ grains as you can. 3 meals a day with half veg, quarter carbs and quarter protein. Limit very processed foods - cook as much as you can with foods you recognise where they came from. You don't need snacks, drink water tea and coffee, limit sugary drinks (including fruit juice).
Eat a bit of what you fancy, so you're not craving food, but don't go mad on sugary foods.

Healthy menu:
Porridge or Greek yoghurt with berries and a few nuts for breakfast
Veg soup/ mixed salad with some protein then a piece of fruit for lunch
Stir fry veg with some protein/ jacket potato/ roasted veg with chickpeas then a small piece of dark chocolate for dinner.
