Packed lunch ideas to stop dying of boredom.

I have lost a stone so far, and would like to lose at least as much again, if not a bit more. Post menopausal, I find eating fewer carbs works, so currently taking carrots, cucumber, baby corn, pepper, sometimes beetroot for lunch, with boiled eggs, a portion of fruit and some oat cakes.

I aim for about 400 calories. Just getting really bored with the same thing every day and need some inspiration. I don't eat meat, and prefer a cold lunch as my break is often limited. Any ideas please?

Soup in a thermos.
Home made veg soup. Delicious, nutritious, cheap and easy.
Experiment with different veg combos but always use onion.
I use up all the manky veg from the bottom of the fridge in a soup.

Do you eat fish/shellfish? You could probably substitute these out if you don’t but a few things I like
Smoked mackerel and beetroot/cucumber etc
Prawns and put lentils
Feta salad (with olives, tomatoes etc). Use a low fat version

I buy sushi from Lidl to eat for lunch. Not bad for supermarket sushi and pretty low calorie.
Quite like falafels with salad - Gosh ones are nice if you can't be bothered making your own.
Cous cous and roasted veg - tastes nice cold.
Spanish omelette - again can buy in supermarkets if you don't have time to cook from scratch. Don't eat a whole one yourself though, will be too many calories. So would only work if you have family to share it with or can stand to have the same thing more than one day 😊
