What do you eat when calorie counting?

I successfully lost around 3 stone a couple of years ago following slimming world.

I've put about a stone back on during lockdown and am slowly getting it back off following slimming world but have been following some pages on Instagram that seem to favour calorie counting now and was thinking of giving it a try.

I just can't seem to think of good low cal meals and tend to fall back in to slimming world.

I don't have any issues with slimming world calorie counting just seems to have a bit more freedom on what you eat.

I am an awful lot more active now than when I lost the first time too so I know that should help.

Sorry I'm rambling now, please give me some lovely low cal meal ideas Grin

I find the BBC Good Food website really useful for finding low calorie, healthy meals.

This page has different recipe collections, including collections for meals under 400, 500 and 600 calories

Beans on toast. Two slices of hovis medium sliced whole meal bread (no butter) and 200g Heinz baked beans. 350 cals and very filling, I find.

Love the glorious skinny soups. Plenty of veg, fibre and carbs so I top it up with a pack of meat for protein.

Boiled eggs.

French toast with a piece of bacon and fried/roasted veg.

The bean pastas from aldi are great.

Bolognese with veg.

Quark yoghurts

Prawn stir fries with loads of veg. The amount of bulk you can get for very few calories is remarkable. Sometimes I'll stir an egg through.

Last night I cooked up 3 big chicken and vegetable "traybakes". (onion, courgette, carrot, baby corn, spinach, leek, sugar snap peas, green beans, garlic) One with lemon and herbs one with Moroccan spices and one with Chinese spices. Split it all into portions for the freezer, I'll add either cottage cheese, tin tomatoes, low fat coconut milk, soy sauce etc and serve with potatoes, couscous, rice or noodles and side salad.

Lunches are usually soup, omelette and salad, cooked chicken salad

Breakfasts I struggle with, this morning it's porridge and I think I'll just stick with that for a while.

Fresh fruit and yoghurt for desserts

Fibre One type bars with a cuppa
