Mainly for lunches but any dinner tips would be great too.
The challenge is I'm quite a picky eater (v long story) and eat a very limited amount of veg.

I can eat - sweet potato, broccoli, cauliflower, green beans, peas, sweet corn, roasted carrots, small quantities of wilted spinach - but no raw vegetables.
I usually make a veggie sauce for my bolognaise once a week where I blend peppers, spinach, mushrooms, tomatoes into a sauce to put on the mince to cook down along with passata but I know I'm not getting anywhere near the recommended fruit and veg amount a day.
Anything like beans / chickpeas is completely fine.

I usually have lots of chicken breast in the freezer and portioned lidl salmon too.

I'm hoping to batch cook ahead for the week as I end up being lazy mon-fri and going for something easy or just snacking on crap instead of having a proper nutritious lunch.

Could anyone recommend any recipes or meal ideas I could try out?

There is quite a lots of prep on instagram which covers what you eat so absolutely have a look there, you can doscover quite some treasures!

Do you also eat white fish? I found having nice fillets in a freezer is great for days when you want good dinner, but need something less calorific.

I make tomato sauce in a slowcooker and freeze it in portions. It's a base and depends what you add to it later.
If I add more mixed herbs, basil and bit of balsamic, it's amazing for pasta. If I add harissa spices it goes that way. Or paprika, smoked paprika, rosemary and tabasco - Spanish(ish?) based flavours. Then you just add veg and/or meat. Very easy and quick.

Quishe freezes well in my experience and you could use lots of the veg you eat in it as well.

Do you like wasabi?
Salmon with lots of black pepper. Pan fry, meanwhile boil potatoes. Flip fish when ready. Add to the pan garlic and broccoli (i love the tenderstem one) green beans or mangetout beans to fry up in the fish fat. Mash potatoes with wasabi (if you don't like wasabi add flavour with little bit of yougurt and some herbs). When the fish is ready, take it out and to the pan add ginger (a lot), then teaspoon of honey and 10ml or so of soy. Mix so it mixes and covers the veg nicely. Reduce if needed. Plate up. It takes few minutes and it's very easy. You can then play with different flavours and veg combos.
If you like spicy you can put bit of sriracha or any chili sauce in the non skin side of fish. It nicely caramelises.
