Hi. I'm on 1,200 cal/day max and my menu is quite limited. So I thought I'd try and get a thread going where people can share their low-fat ideas for snacks and meals. I'll start:

Snacks:
Rice cake with cottage cheese

Hard boiled egg

half a banana

Meals:

Cauliflower rice with smoked fish and a tomato sauce

Salad with mixed vegetables, and some tinned tuna

Thin bagel with cottage cheese and vegetables

Anyone else?

Egg white omelette (I use half a carton of Happy Chick Egg Whites which = 96 kcal) with tons of veg (I like to use onion, courgette, peppers, mushrooms and spinach) and some chopped ham, all made with Fry Light. Serve with a slice of bread or a few new potatoes to bring it up to 400kcal.

Home-made vegetable soup using Fry Light and low-cal veg like leeks, broccoli, onions, cauliflower, peppers. Serve with bread.

Small gammon steak (c.150kcal) with pineapple ring (15 kcal), served with a few new potatoes (I boil them, then spray with Fry Light, add salt and pepper and spices then roast in the oven for 15 mins) and salad or veg.

Beans on toast (2 slices of brown bread, low fat spread, half a tin of beans) plus an orange for vitamin C.

Snacks:

Packet of Quavers/Snack-A-Jacks/Wotsits

Small handful of dried fruit

Bernard Matthews turkey chunks (one pack is 100Kcal)

1 scoop of supermarket ice-cream (not Haagen Daaz or Ben & Jerrys - they're very high in cals)

Strawberries/raspberries or 2 tinned peach halves with squirty cream

BarryWhiteIsMyBrother · 05/01/2021 12:25

Great ideas - I will try out the turkey chunks and the egg white omelettes!

A sub 400 kcal lunch that I find very satisfying (I eat it every day still, even though I'm not looking to maintain not lose) - grate half a courgette, and fry in a frying pan with 5g butter, salt and pepper (and any other seasoning, I use Maggi or add hot sauce at the end). When its cooked and starting to go brown, mix in 30g grated cheese. Put the whole mixture on a slice of toast and under the grill for a few mins. I'm sure some people would think this was totally disgusting, but it ticks all the boxes for me! Crispy, salty, cheesy, filling and comes in at 286 kcals.

Also, easy peelers are a great sub 50 cal snacks.

Breakfast: porridge with a banana chopped in, or Greek yogurt with fruit & a few nuts

Lunch: bean or lentil & veg soups are v filling, or there are low cal wraps for a sandwich

Dinner: 2 veggie sausages, a 2 egg omelette, a bean burger/veggie patty, veggie Bolognese or chilli - all served with loads of green veg

It’s not that hard to make a 400 cal meal, if it’s a ‘main’ & veg - I find the difficulty is when I include potatoes/bread/pasta that is 200 cals at least already

Snacks - piece of fruit & 4-6 almonds, a cracker with low fat cheese, maybe a low fat yogurt

BarryWhiteIsMyBrother · 05/01/2021 22:22

I like your dinner suggestions. Thank you

On my low cal days I have roasted pepper, plum tomatoes & onions with diced chicken and a drizzle of sweet chilli sauce. Great big plateful for about 275kcals.

maddy68 · 05/01/2021 22:33

Omlettes, salads , lots of veggies (avoid carbs if you can )

BarryWhiteIsMyBrother · 05/01/2021 23:10

What do you season your salads with?

Everything I was going to suggest has been said apart from one crumpet with a teeny bit of butter or jam which is a great midnight snack for me in this weather Smile Oh and another not very healthy one is a cup of tea with four rich tea fingers. I use cashew milk in my tea and like it strong so with the biscuits comes in at about 105 calories.

Soy sauce, lime juice and dijon mustard, shaken together in a jam jar.

Also dip vegetables in this as a snack.

EatsFartsAndLeaves · 06/01/2021 03:22

^ That was supposed to quote the salad dressing post above it, sorry it didn't work!

BarryWhiteIsMyBrother · 06/01/2021 14:05

I got that, thank you @EatsFartsAndLeaves

I am also liking mini chicken breast fillets (200g) with broccoli (300g). I let the broccoli go a little mushy, then add them to the chicken before adding a spoonful or two or tinned ratatouille to make everything bind together. Delicious, filling and comes in at around 350 calories.

Warburtons thin bagels are also great. Just 130 calories and with some cottage cheese they make for a delicious and filling snack.

Watching :)

Zoeyclash · 08/01/2021 08:34

Great thread!

I find the Lotus Biscoff biscuits a great snack to have with a cuppa. They come wrapped in little packets of two & it's 75 calories for the packet. These were my life saver during the last lockdown. Plus, they're very good value.

Another great filling snack is two rice cakes with peanut butter and mashed banana on top. It might not sound very appealing, but it really is delicious and it is genuinely filling.

Zoeyclash · 08/01/2021 08:37

@EatsFartsAndLeaves that sounds delicious! Do you use freshly squeezed lime juice or can it be bought already squeezed, similar to lemon juice?

BarryWhiteIsMyBrother · 08/01/2021 08:41

Hard boiled eggs are great for snacking. High in protein so filling.

Oooh, watching with interest!

I find a small mug of cocoa mid afternoon is warming, satisfying and filling.
Semi-skimmed milk, cocoa (not drinking chocolate) and half a tsp of sugar. Not many Cals.

or a sachet of Miso soup.

Mummyoply · 11/01/2021 11:56

Vegan Burger (Waitrose is only 161 cal) and salad. Use an iceberg lettuce leaf instead of the bun. You can tailor your salad with anything you want to the limit of 400cal. I have this meal a few times a week and it's typically around 350 calls for a big plateful, but I have a lot of lettuce, cucumber and celery on my salad.

Monkeyseesmonkeydoesnt · 15/01/2021 20:55

Babybels
Muller lights
Mini choc bar from kids variety pack bags
Mini low cal hummus pot with 2 slices of nimble bread
Mini cheddar bag from a multipacks
Popcorn
Celary sticks with peanut butter or just plain old salt
Rolled up slices of thinly sliced ham
Ricecake with light cream cheese

cat9 · 15/01/2021 21:00
