Recommendations for a diet i can follow please ?

I've been struggling to lose 10 pounds for 18 months .
I lose 3 - 4 lbs and then put it back on .
Basically my lifestyle doesn't help .
I just have a really sh*t work/life balance which for various reasons I cannot change (everything will change a year in September so it's not forever).
I work full time in a very stressful job .
Leave the house at 7 and get in at 7 sometimes 8 .
Dd is 10 and home alone with her 17yr dB currently .
I drive 3 hours a day .
DP works equally longs hours.
When I get in (wrong I know) I pour the most enormous glass of wine (and wish I could crawl into bed with a book) and spend an hour in the kitchen cooking if I can and catching up with dp and dc .
DP gets in about the same time and doesn't cook but will always help in any way like picking up food for me on way home .
We aren't very organised with shopping as never home and there's never any Tesco slots now .
The nhs hour for me os 6-7 or 7-8 or something early morning ...... so come sat i am usually comatose at this hour and cannot face a food shop !
I don't like fast food neither do I like buying any diet / low sugar foods .
I like real food iykwim ... real butter/ olive oil / meat and veg .
I'm at that age when even a sniff of carbs just sticks to my tummy !
I do absolutely no exercise which I hate
Love meat.
It's time that's my problem really .
I need food that is quick .
I need a diet that is realistically something I can plan into and the whole family can eat too.

Easy breakfast which I can eat in the car
Maybe soup or something I can take to work
A good family meal with my large wine or G&T counted in .
Is there anything I can seriously hope to follow please ?
I've tried SW and it just doesn't work as don't like all the diet foods and carbs.
Tried keto and too time consuming, confusing and expensive .
Calorie counting has worked tbh but I'm open to any suggestions please that being so busy I can manage ?

Try another supermarket like Iceland as you might be able to book a shop delivery in advance.
In terms of exercise, do you work on Saturdays? If not, could you start couch to 5k?
