Healthy and quick lunch ideas?

Whenever I'm meal planning for the week I always get stuck on lunches! I'm bored of sandwiches and jacket potatoes and salad. Not a massive fan of omelettes which is all I can really think of in terms of quickness! What's your favourite quick and healthy go to lunch?

I eat soup for lunch sometimes, or couscous mixed with veg and raisins.

Also often eat leftovers from the night before or lentil Dhal.

humous and ryvita with tomatoes

Wraps- salad, chicken breasts.

Breadsticks, carrot sticks , celery with homemade dips.

Salad bowl with tuna

Bagel, salmon/palma ham, cheese and chive spread.

Stir fry

Brown rice , brown pasta is healthier than white.

Tomato's on toast with salt and pepper is lovely.

Spanish tortilla, grated cheese, hummus and chopped tomatoes.

Mushrooms on toast.

Cottage cheese, on Ryvita seeded thins, with chopped green olives on top.

Leftovers from dinner, eg veggie pasta.

Open sandwich of hummus, grated carrot, sliced red pepper and sprinkle of coriander.

Scrambled eggs, drizzled with plenty of hot sauce.

Pot Noodle on Friday when I was feeling "can't be arsed" Grin

I usually have an apple/pear/banana and yoghurt too.
