Please can I ask for a carb free

Substitute for bread/baguette.
I need to get rid of some Anchovies and the best recipe I’ve found is a bruschetta. What can I use instead of bread for a bruschetta which will sir well with Anchovies please? 🙏🏻

Slices of aubergine, brushed with olive oil grilled on one side and then topped with anchovies and mozzarella and grilled on that side. Like cheese on toast!

Anchovies in pasta sauce with courgetti rather than spaghetti.
