it would have been couscous with roasted vegetables but I'm off wheat for a while so that ones out the window

CoV - how do you cook the chicken? Spykid, that sounds lovely except beetroot is one of those foods I just can't bring myself to eat! Thanks anyway.

Poach skinless chicken breasts in chicken stock until cooked through. Remove from stock and add chopped chives, lemon juice and a teaspoon of cornflour (dissolved in water) to the sauce and cook stiring continuously for a couple of mins until sauce has thickened, then pourover chicken breasts. It is low fat and poaching the chicken keeps it moist and tender.

you can cook the beetroot , or buy those vaccum packed ones from supermarket, just as nice.

also nice without the beetroot ts

Veg chilli & brown rice (but I have to have cheese with it).

Tagliatelle carbonara, with low-fat soft cheese and a raw egg stirred in instead of cream. stir in peas, bacon bits and softened onion (or raw spring onion). Lovely.

Trout fillet wrapped in foil with tbsp coriander pesto, crushed garlic clove and a squeeze of lime & baked for 20 minutes. Serve with sweet potato & l/f cream cheese mash.

All yum imo.

Bugger-knew there was something I meant to get today-bloomin' chives so I could try COV's recipe after she mentioned it the other day....

Feta and Beetroot-mmmmmmmm-not sure feta qualifies as low fat/calorie though

morocan chicken wit cous cous. (Chicken chunks cooked in tomato sauce with harissa paste, apricots, peppers, mushrooms, chick peas, tspn of homey in sauce to counteract the heat of the harissa. Serve with wholemeal pitta strips, garnish with loads of fresh corriander. Is gorge. Works well as a veggie dish without the chicken, but with courgettes.
