Low carb, sugar free cheap lunches. What are the options?

Just that really. Thinking ahead to January. Usually buy lunch but want to save money. Soup is a always a good option but was looking for other idea- any suggestions?

Interested in replies. I used to batch cook chicken thighs tinned tomatoes chorizo smoked paprika and whatever veg were in the fridge which was a nice lunch....but then I got lazy and fat!

Omelettes.

Big salads with lots of cheese (I also have chickpea, lentils in them but I know purists don't).

Cold chicken/tuna /egg salad with oily dressing, lots of veg for bulk.

Picnic style lunch : Cold roasted vegetables, sliced meats, hummus, crudités.

I think organisation is the key Jaffa.

I enjoyed reading your suggestions whilst eating a mince pie toffee.

Will need to sort it out next January.

I cook extra for dinner and heat up leftovers for lunch.

Agree that meal planning and prep are key!
