I want to give up calorie counting and start low carb; please help!

I know the site is full of people saying the same and I've done some research but I don't know how to actually start! I'm quite overwhelmed by it all. I'm also a vegetarian who doesn't east fish or eggs. Can I do this? What would I eat? What would a day's eating look like. I'm not very good at cooking, but am willing to learn. Do you have to count carbs? Is there a tracking system like MFP? Can anyone help to get me started? I need to lose 2 stone and I'm totally sick of myself. I'm addicted to carbs and feel like I'm dragging my big fat arse through every day. I'm sure carbs affect my mood. I've looked at the boot camp info, but still not sure what my first steps would be.

Why don't you come and join us on Bootcamp? We start week 6 tomorrow, but it doesn't matter - you can join at any time, there are lots of long term low carbers who post between Bootcamps.
Find the latest Bootcamp chat thread, it's entitled 'Week 5 pre-summer low carb bootcamp ...', look at the link to the spreadsheet in the OP and then on the tabs at the bottom of the spreadsheet you'll find the rules for a vegetarian Bootcamp.
It won't be so easy for you if you don't eat eggs, but it will be possible, I'm sure!
Also, Rose Elliott has a vegetarian low carb diet book and recipe book it would be worth you looking out for.

What do you eat in a typical day now?
You can use MFP, instead of looking at the calorie count look at the carb count instead. Are you using MFP now?

I use MFP now.
Breakfast: oat so simple porridge
Lunch: quorn burger wrap with salad
Dinner: veg stir fry with a packet sauce and rice.
How I would substitute these meals???
