Ok, so me, Emkana, Wisp, Yeahbut and the Countess! Right girls. This it. We will be even more gorgeous by Christmas! This is what I'm having for dinner tonight, I highly recommend it....YUMMY!
Indian spiced chicken (5 points)
serves 4
4 chicken breasts
100ml of low fat plain yog
2 garlic cloves crushed
1/2 tsp turmeric
1tsp ground cumin
2 shallots (or red onion) chopped v. finely
2 tblsp of lemon juice
2 tblsp of chopped fresh coriander
1/2tsp salt (don't leave this out, it needs it!)
8oz basmati ice
50g frozen peas
2 tomatoes, de-seeded and diced
1 tblsp fresh mint
salt
lemon wedges to serve
chop chicken breasts into large chunks. Mix yog, garlic, turmeric, cumin, shallots, lemon juice, coriander and salt. Coat chicken in it, marinate for 1 hr.
- heat over to gas 5. Spray oil a baking tray and place chicken on it. Bake in oven for 25 mins
- cook rice adding peas once water is boiling. Drain, stir in mint and tomatoes
- serve chicken on top.
This is a ww recipe but slightly tweaked (arf!) to make it even better.
