Am craving the crunch of a biscuit or crisps!!!!!!

Had a gorgeous dinner but a bit fed up of cream.

B - tea
L - 2 x eggs, bacon, sausages and mushrooms

Well, I've just had my first crap meal of Bootcamp.

The plan was to fry a couple of leeks in butter and then add eggs and cheese. Only I didn't fry them long enough and it wasn't very nice. I had a chicken thigh straight out of the oven to make myself feel better and now I'm too full.

Silver lining is that, as a result, I don't feel like wine.

Why has it taken me so long to sample cauliflower rice. Amazingly delish with the IPD butter chicken and broccoli!

Tried the cauliflower pizzas again tonight, at request from DH who thinks they're lovely. I'm still not sold- they were better this time, but still missing 'something'

Have I shared my recipe for chicken 'pizza'?

Per person:

One chicken breast. Cut it lengthways in half, but don't cut all the way through - you are going to open it up like a book.

Put it between two sheets of clingfilm and bash it with a rolling pin to flatten it out, so that you end up with a thin base, like a pizza base

Make some tomato sauce - oil in a pan, tin of tomatoes, garlic, herbs, seasoning - bring to the boil and cook till thickened.

In a frying pan, heat some oil and then fry the chicken breast on one side till browned - it will only take a minute or two as it's so thin.

Flip it over and cook briefly - for another minute.

Then spoon over some tomato sauce, and top with whatever pizza toppings you normally like.

Put the pan under a hot grill (if it has a plastic handle, keep this away from the hot grill!) until any toppings are cooked/cheese has browned

I know I dont NEEEEEED to have cream but it is such a novelty I was loving it! WW has scarred me from the delights of having butter and cream!

Tea - (sorry night sky) - pork belly slices served with mushrooms, sprouts, broad beans and green beans cooked in a soft cheese and garlic sauce.

BIWI where do we stand on broad and green beans? Have a feeling they are not great but couldn't turn my nose up at he first meal dh has cooked this week.......

Ooh, if you live or work near an itsu they ave packets of that nori stuff but not as chewy or claggy and saltier. It is lovely. And far too expensive for what it is Grin

Ruprekt I'm with you on the butter and cream... I've been in a WW mindset for so long that a diet where you can eat butter, cheese and cream is very strange. Nice though as cheese is one of my favourite things ever.

I made Almond Crackers today as I was also missing something crunchy like toast.

Very easy and delicious. They aren't exactly crunchy, more biscuity!

Have you tried Parmesan crisps?
Bake little piles of Parmesan/ strong cheddar in the oven and allow to cool

Crunchy, tasty and low carb
