This sounds like a thread i need to join
im afraid i dont really have any ideas, but feel ur pain
i am a student nurse working them 3 or 4 long day shifts, hardly ever knowing when im getting a break,
i am border line diabetic and really struggle with having both high and low blood sugars
At the moment i have soups with rivita, porridge in morning and a pasta in evening. with a musli based snack in the day .. but it does get boring

im looking forward to hearing anyones ideas

good luck

Does it necessarily have to be low fat? Given that you're effectively missing two meals and you need to have low sugar/carbohydrate for diabetes you might be better having some fats to help you feel fuller for longer. Even whole grains affect your blood sugar.

If you have access I a fridge could you have some mini cheese portions (you can get variety packs in the supermarket), or cold cooked chicken/beef/salmon/turkey/ham (cooked at home or bought in packets, but careful that there isn't a sugary coating) plus a little mayo and cucumber and celery sticks. Olives might be nice too?
