convenient little meals for one?

i want to lose weight and eat more of the low fat/healthy stuff but the situation at the moment is that dd is a really picky fussy eater (doesnt like dry food) and ds wont eat any food at all unless it is completely dry. there is not one meal i can cook which both of them will eat and by this time generally ive lost interest in cooking anything decent for myself. i know ready meals are expensive rubbish so i want to pick a time when they are both in bed, cook some things and freeze so when im fed up or tired i can just bung them in the micro. does anyone know what kind of things i can cook/have a recipy or two?

ive had a root through my low fat cookbook but its all meals for four and i cant be bothered to work out all the ingredients (and tbh when ive tried it goes pear shaped pretty much), dont have any space in fridge or freezer for lots and lots of things (and really dont want to eat the same thing four days running!)
