I have received a celeriac in my veg box and have a few ideeas of how to cook it. However, I am following the low GI diet and want to make sure celeriac is a low GI veg.
Does anybody know what GI it has ?

I have wondered about this too as I love celeriac! It hasn't been measured. The GL diet book I have puts it as similar to carrots and other root veg but I think that is just guesswork. It would be lower raw in salad than cooked but I think it should be okay in not too big amounts.

Thank you. I have just done a search on the internet and found it to be low. It is recomended mashed as a replacement for mashed potatoes for those who like mashed potatoes.
I think I will grate it raw with carrot, aple and low fat mayo.

It's a form of celery, so as celery is low GI, I would treat celeriac as low GI too.
