Hi all! In my never-ending quest to finally shift the last half stone of baby (well toddler now really) weight, I am finally set on starting to low carb. I am a vegetarian, and whilst I have been lurking on the bootcamp threads, I have struggled to actually get my head around what I can actually eat on that one, though others success has been very inspiring!

I lost 2 stone on slimming world, but then stalled, and have been losing and regaining the same half stone for at least 6 months doing calorie counting on mfp, trying various calorie allowances, various nutrient ratios, various forms of exercise etc etc. I was running quite long distances not long ago, but an operation followed by a string of minor illnesses has scuppered that!

I have been inspired this weekend as I have been away with a couple of good friends who are complete foodies, been have lost lots of weight and look fab low carbing. We have been staying in a kosher vegetarian house and they have still managed to eat amazing food.

I am torn on the merits of low carb, but i really want to shift this weight now. I have just broken up from uni for summer, and want to go back a new woman! I have just ordered the two rose elliot veggie low carb bookson amazon, so hopefully they will be with me not long after I get back. They seem to essentially be atkin's adjusted for vegetarians.

I realise I am appealing to a small demographic as there are not that many vegetarians, let alone those that want to low carb, out there, but nevertheless it would be lovely if any of you out there would like to join me, or through in your two pennies worth! I don't want to distract from the other great threads running ATM as they're doing a gret job, but I do feel it would be nice to have one better suited to us veggies! Grin

I think from what I've read, some of the books have been republished with the low carb title and just a new short intro - does anyone have the book to confirm? Publishers are cheeky like that Grin.

Keep posting the meal suggestions! They're getting me all excited about starting this diet once I get home. I'll order the books - which do you recommend most?

I followed Rose Elliot's low carb veg books last Fall for a bit and lost 30 lbs or so - I lost 11lb in the first week! But I ended up stopping because there was too much animal protein in it for my liking and I was leaning more towards a vegan approach. I don't like to eat that much cheese! It was also hard for me to make some of the recipes because some of the ingredients she calls for we can't get (I'm in Canada).

I bought a no added sugar milk chocolate bar from holland and Barrett today. Apparently it only has 3.47g net carbs. I don't know if I trust that, or whether I am allowed it, but I am going to eat it anyway as I am hormonal and i neeeeeed it...

Thanks Suddenly :) I don't think the diet would impact on the endo pain but I would keep an eye on it and see how you go.

re calorie restriction / counting, I am reading Dr john briffa at the moment and it is really interesting mind blowing having all the 'dieting' ideals I have grown up with turned on their head. Looking back, my weight problems can be traced back to my teenage years when I started the whole low fat calorie counting way of eating. I can highly recommend reading some of his stuff (its handy having a come back for the low carb haters you may encounter Wink)

so weight today is 12st 5lb. At 5ft8 I still have some to lose just not sure how much? I have lost 4st 5lbs since Feb on a vlcd but I have felt the need to switch back to food for a couple of weeks now.

I'm going to have a look at mfp to keep a check on my carbs. I did struggle before as a veggie keeping to 20g a day (I love nuts) and had to resort to a food diary to keep on track Blush

I might be interested too - have just been looking at low-carbing on the internet and have 1-2 stone to lose (1 stone "baby weight" (5 yrs old Blush) plus another stone to get to a more heathy weight). Am almost completely veggie with occasional fish. I'll have to wait until after the weekend as have visitors and a picnic! Will watch with interest!

Ghost I have ordered the rose Elliot vegetarian low carb diet and the cookbook to go with it. I ordered them both used on amazon. I can't say what they're like yet as I've not got them yet, but there are some reviews on amazon that you can read.

I'm a similar starting weight to you Suddenly, and want to lose about two stone (am shorter than you are).

I've been tentatively cutting down on bread/pasta/potatoes/fruit and some of the more carby veg in the last week or two but have been subjected to a lot of stress followed by celebratory drinking so have not been very strict.

I have a dinner tomorrow night, then another on Saturday so am going to aim to start the Atkins induction phase on Sunday/Monday (depending when I get to grocery shop, have a lot of visitors this weekend!).

Well weighed myself this morning and I'm exactly the same. I know it's a bit much to expect to lose anything in one day, but I thought on this you could lose weight quite quickly so I kind of hoped there's at least have been a quarter pound off or something! Grin oh well, I am getting AF I think so that might have something to do with it - at least I didn't gain!

Will look at the rose elliot book. I had a cheese omelette for breakfast instead of normal porridge - will start trying to reduce carbs gently over the weekend despite visitors and food to use up :)

I've bought a cauliflower this morning and tried an idea adapted from one of the links I've been browsing - grated 3 large florets into a bowl, cover and microwave for 2-3 mins, stir in a large spoonful of soft cheese and a handful of grated mature cheddar. Similar texture to risotto and a very quick lunch :). I'm going to try the grated cauliflower as an alternative to rice tonight as I have a pre-prepared quorn chilli in the fridge.

I need to be careful about getting enough fibre if I am increasing protein as I find I get constipated easily. I normally have a huge bowl of porridge to start my day - any good ideas for breakfasts?

There is a recipe in the book for high bran hot cereal:

Put 15g wheat bran and 2 tblsp ground flax seeds into a bowl and add 150-200ml boiling water, stir and let stand for 2-3 mins.
Add salt/butter/sweetener/cinnamon/whatever you like.

3.1g net carbs.

I am having people round for dinner next week and would like to stick to phase 1 if possible. Does anyone know a seriously lush recipe that I can serve for all of us? They are meat eaters, so I can always add carbs or some meat to their meal, but i would like to be able to eat something nice too! Grin

Suddenly I'll have a think about recipes for your dinner guests. Could you do some some sort of veggie gratin that you could have as a main and they could have as a side to a roast dinner?

I feel quite proud of myself this week, haven't had more than 20-30g of carbs each day and even resisted cake/biscuits when they were offered.

It was a bit strange having an Indian takeaway this evening though and DH was a bit Hmm when I said that I didn't want rice or chapatis. I had saag paneer and mushroom bhaji which I hope was a sensible choice. I have had a glass of wine though.

Not sure what I will do next week though when we are away - I am resigned to a week of omelettes, cheese and salad Sad.

Ok so weighed myself this morning and down to 11.8 so that's 2.75 off! And today is when I officially start rose elliot and really stick to her rules. The last couple of days I have been kind of winging it a bit with my own version of Atkins, but I have been averaging about 40-55g carbs/day, so it will be interesting to see if I can stick to 20g carbs and what difference this will make to my weight loss.

This morning I am having eggs and veggie sausages for brekkie, we are going to a wildlife centre with dd later so i have packed a goats cheese salad for lunch, and we're having cream cheese and spinach gratin for tea and I will bung some spuds in the oven for the others, and maybe some meat for dp.

I have also got decaff coffee and cream in, and decaff tea and unsweetened soy milk. I also bought some sugar free cans of shandy from tesco that are sweetened with sucralose instead of aspartame and are caffeine free!

Got to measure myself too now I think, where's that tape measure got to?

Try Celia Brook Brown's low carb veggie - her recipes are more interesting than Rose Elliot's - less worthy though Wink it's out of print but worth tracking down a second hand copy.

Start with your favourite soup and some good bread for the guests then serve Romano peppers stuffed with feta mint pine nuts and lemon it's a stunning dish - have a look for it on the recipe thread - you can make it up before hand and do the final cooking in the oven when your guests arrive - serve with a salad.

Serve nuts for nibbles and maybe some homemade guacamole - have a plate of nachos and cucumber to scoop it up, when I've done this most people have opted for the cucumber it's works really well.

Gooseberry fool for pudding - you could add some stevia to yours - trivia is probably the best brand I've tried - but don't over do it as sweeteners are best used to calm sourness rather than add sweetness iykwim. You don't want to tastethe stevia.

Ok, 150lbs here (I put on a pound in five days at my mum's house Wink). I'd ideally like to lose 20lbs but if I could see the lower side of 10 stone I'd probably be happy!

Haven't had books here yet and I have PILs and SIL (who has a severe eating disorder) here this weekend so I won't mention it. But I had omelette for breakfast Smile.
