Low carb vegetarian? Rose Elliot specifically.

Hi all! In my never-ending quest to finally shift the last half stone of baby (well toddler now really) weight, I am finally set on starting to low carb. I am a vegetarian, and whilst I have been lurking on the bootcamp threads, I have struggled to actually get my head around what I can actually eat on that one, though others success has been very inspiring!

I lost 2 stone on slimming world, but then stalled, and have been losing and regaining the same half stone for at least 6 months doing calorie counting on mfp, trying various calorie allowances, various nutrient ratios, various forms of exercise etc etc. I was running quite long distances not long ago, but an operation followed by a string of minor illnesses has scuppered that!

I have been inspired this weekend as I have been away with a couple of good friends who are complete foodies, been have lost lots of weight and look fab low carbing. We have been staying in a kosher vegetarian house and they have still managed to eat amazing food.

I am torn on the merits of low carb, but i really want to shift this weight now. I have just broken up from uni for summer, and want to go back a new woman! I have just ordered the two rose elliot veggie low carb bookson amazon, so hopefully they will be with me not long after I get back. They seem to essentially be atkin's adjusted for vegetarians.

I realise I am appealing to a small demographic as there are not that many vegetarians, let alone those that want to low carb, out there, but nevertheless it would be lovely if any of you out there would like to join me, or through in your two pennies worth! I don't want to distract from the other great threads running ATM as they're doing a gret job, but I do feel it would be nice to have one better suited to us veggies! Grin

Lots of good recipes on BIWI's thread here

SuddenlyMadameGlamour · 27/06/2012 23:47

Ta for that link. Also just realised that's the first time I've been able to follow a link to another thread on the iPhone app. Have they finally sorted it out then?! Shock

Morning ladies! Well just weighed myself and I am 11 stone 10.75 lbs. Blush

I am 5'6" so that gives me a BMI of 26. To get into an acceptable range, I have to get down to about 11stone 2, and incidentally that is the weight I was when I fell pregnant with dd. So my target for now is to lose about 9lbs.

After that, well I have usually felt quite good at around the 10st 7 mark, so I will try to get to that. If I manage that I might even go further, depending on how I feel! This is all a bit optimistic I know, but might as well aim high!

I'm going back to bed for a bit as dp is on holiday and has offered to get dd up for me as I'm still not that well. I've had a cold, which I thought had more or less gone, but suddenly on Monday night I've gone almost completely deaf in one ear and the pain is immense! Anyone else ever had this? I'm guessing it's an ear infection, haven't had one since childhood. Just wondering if it's worth going to the docs or not?

Anyway, I digress! Hope you have a great day girls and I'll be back in a bit to let you know how my low carb brekkie is! Grin

OP posts:
SuddenlyMadameGlamour · 28/06/2012 07:47

Oh dear, dp has just brought me a cup of tea - bless him! It will have skimmed milk and sweetener in because that's how I have it, but that is probably not allowed is it?

Not 100% sure, so just going to drink this one now Wink, clarify the rules later and then brief dp so this doesn't happen again! Grin Does anyone know if soya milk is allowed over normal milk? Ir is it just a case of herbal teas all the way in the beginning?

OP posts:
SuddenlyMadameGlamour · 28/06/2012 07:48

Does anyone else dare weighing in with me ...? Smile

OP posts:
SuddenlyMadameGlamour · 28/06/2012 08:16

Apparently my cup of tea has 3G of carbs in. So I'm guessing if I still stick to my 20g limit, that should be ok?

Suddenly I started this low carb thing on 8th May, weighing almost exactly the same as you, 11 stone 12 and 5 foot 6. I now weigh 10 stone 13 Grin and am keen, like you, to get to 10 and a half stone. I didn't go with the 20g of carbs a day; instead I try to limit my intake to around 50 g a day. I log all my food on myfitnesspal.com, so it works out the carbs for me. I am still drinking tea and coffee with milk (1/2 a pint a day works out at 12g carbs). Still having the odd glass of wine (and have twice had Indian takeaway and a few drinks). I found that the starting phase of Atkins was too tough for me but am more than happy with losing almost a stone over the past 7 weeks.

So what I'm trying to say is don't worry too much about the 20g phase, as I'm sure you will lose plenty just by cutting down. I think diets always fail if you've can't have a little bit of a treat. Best of luck - am about to get the Rose Eliott book from the library.

beanandspud · 28/06/2012 08:32

Suddenly I have consulted Rose and unsweetened soya milk is lower in carbs than normal milk or you can have double cream diluted with a bit of water Hmm.

That sounds like good advice Boris.

Breakfast this morning was 'corn' bread with egg mayo - actually very nice!

ghosteditor · 28/06/2012 09:12

A weigh in? Eek! I will weigh when I get back from my parents' house - should be a good kick in the bum as all mum and I do is go out for lunch and eat cake Blush.

I too have a cold/blocked ear thing which is thwarting my desire to go for a run.

SuddenlyMadameGlamour · 28/06/2012 09:58

Ghost - never weigh yourself unless it is 1st thing in the morning, before any food or fluid and after having been for a wee and poo if possible. Well that's my mantra anyway!

OP posts:
SuddenlyMadameGlamour · 28/06/2012 10:30

Hope your cold gets better too ghost.

Thanks for the advice about milk bean, in town now and really fancy a coffee - may just have an americano with whole milk as the soya they use in costa is sweetened I think. Guessing whole milk is better than skimmed for some reason?!

PenisVanLesbian · 28/06/2012 11:14

can someone post the recipe for the "cornbread" please? thanks

SuddenlyMadameGlamour · 28/06/2012 12:39

I don't have access to the cornbread recipe yet penis, but this link has a recipe for muffin in a minute that looks quit bread like that I may try tomorrow...

First challenge has arisen, mum wants to take me out to lunch at the local village pub, which does beautiful food, but has a very small menu that changes daily (which usually I like) and they only ever have 1-2 veggie choices. I just hope that they might be good about knocking me up a salad or something, they usually do baguettes at lunchtime so I'm hoping they can do me a breadless sandwich or something!

Already feeling a bit odd, but not sure if it's my cold or the diet! It's not entirely unpleasant, I just feel a bit spacey and very thirsty, I have been knocking back water and diet coke - which I assume is ok.

OP posts:
beanandspud · 28/06/2012 14:04

'Corn' bread...

Whisk together 4 eggs with 55g of melted butter. Then slowly whisk in 200g of ground almonds, a pinch of salt and a teaspoon of baking powder.

Pour into a 18cm square tin (mine was much bigger so rather flat) and bake for about 20mins on 180'.

The recipe states to cut into 16 - 1.1g carbs per piece.

I also have a slightly spaced out feeling and feel shattered. I suspect some of that is giving up coffee rather than what I'm eating though.

CutItOutAndRestart · 28/06/2012 17:27

I have followed the low carb veggie plan before and have the books somewhere but I am in the process of reintroducing meat - can I still contribute or do you want to banish me to bootcamp? Grin

SuddenlyMadameGlamour · 28/06/2012 18:26

No way cut it out, you are most welcome!

I managed to get away with lunch out, I had a cheese platter with salad, coleslaw, pickled onions but gave the bread to dd. I have been counting carbs with mfp and I have gone over 30 with dinner not counting what I had for lunch so it looks like it will be hard to stick to the 20g induction phase realistically.

I am having spinach cheese bake link here . It is in the oven now and looks "interesting"! I will let you know what it's like!

Feeling ok, but one thing that is concerning me is that I appear to be getting really bad endometriosis pain today, that my recent op and mirena coil should have sorted out. I got a similar thing last month so may be related to my cycle despite getting my period, but I do hope this diet won't aggravate it. Sad

OP posts:
SuddenlyMadameGlamour · 28/06/2012 18:40

I meant despite NOT getting a period. Any probably tmi and wrong thread anyway! Grin

Re: Milk
Yes, Full fat is better than skimmed, but I use "Lactofree" milk which is way lower than normal milk (I think just under 3g/100ml).
Or unsweetened soya milk (bleaugh)

SuddenlyMadameGlamour · 28/06/2012 19:09

Got some unsweetened soya, 0.1g/100g apparently.

My pals also use lacto free. Though it puzzles me as I always thought the lactose was just broken down to glucose so in effect it still has sugars, just simpler sugars which is worse in a way. But I must be wrong as it seems it is recommended by lots of sources for low carbing.

The spinach cheese bake was interesting. Not unpleasant, but quite unlike anything I've had before! Very filling. It was almost like a loaf, a cross between a quiche/bread/cake/ cheesecake. Dd liked it too, though ate more of the baked potato I did for her. Envy

I had a couple of Rose Elliot's vegetarian cookery books years and years ago. The food was really tasty. Didn't know she had written low carb ones. Must look into it. Not doing that well at the moment with weight loss. Was lulled into false sense of security by Supersize v Superskinny last night.

SuddenlyMadameGlamour · 28/06/2012 19:21

I know what you mean Vivienne! I always watch those programmes and think at least I am not that fat!

The other day I was moaning to a much younger, skinnier uni friend that despite sticking to 1200 kcals/day I had hit a plateau and wasn't losing any more. She said "oh you're like those people on secret eaters!"

Yeah thanks for that, you mean those 30 stoners who munch KFC mega buckets after 20 pints down the pub?! GrinAngry

OP posts:
Viviennemary · 28/06/2012 19:31

My diet is practically starvation level compared to hers last night. How anybody could eat a warmed up takeaway for breakfast. This programme has the opposite effect on me from the one intended I suppose. I think well I'm absolutely nowhere near anything like as big as those folk so I can have that chocolate, cake, crisps or whatever. Hmmm. Rethink needed!
