Vegetarian low carb meals?

I don't need recipes really just ideas - does anyone do low carb on a vegetarian (no fish) diet? I need options!

Please don't - I tried it once, it was hell. If I never see another cheese omelette it will be too soon

Rose Elliot wrote a book about a low carb vegetarian diet - if you don't want to buy it, maybe you could borrow it from the library to give you some ideas?

I am a vegetarian who is attempting low carb [ hollow laugh ] I also dislike eggs...

I eat, for lunch mainly, a lot of rocket,roasted veg and crumbled feta cheese. Or quorn fillets. Or goats cheese. or stir fried veg sprinkled with paprika and cubed mozzarella.

Roasted butternut squash served on a bed of rocket with feta/goats cheese is very nice. I know Squash is a higher carb vegetable but it's still OK to eat

Hearty vegetable soups eg fennel, or parsnip (does that count as low carb?). Also try a lovely salad: use lots of different leaves then crumble in goats cheese and pine nuts. Or add tuna, tomatoes, olives and green beans.

Have been following a calorie controlled diet but trying to reduce carbs and increase protein.

Veg Chilli made with quorn - top with cheddar & soured cream & avocado. Eggs for brekkie with plain yoghurt, berries, sweetened with Stevia.
Yogurt, mint & garlic marinade for courgettes served with a garlic, mint cream sauce - with haloumi & green salad
Butternut Squash soup with a coconut peanut relish
Greek salad
Egg Masala

Get Rose Elliot's book - it has the whole thing worked out. I haven't followed her plans because we eat as a family and I don't like sitting down to eat different things to the dcs. So I eat less rice and more sauce etc.
