How do you guys cook spinach? It's one of the things I love to eat when it's cooked nicely, but unfortunately that seems to involve lots of oil. When it's just steamed and plain, it tastes really gross.

So, what are your healthy but tasty ways of cooking spinach?

A shedload of salt. Not exactly healthy, but not fattening either.

I like eggs florentine (well, my version). Spinach just wilted in the water you washed it in, then a couple of chopped chillis. Then put it in a dish and make 4 holes, and crack an egg into each holes you have made. Then bake until the eggs are cooked. Is very good and filling if you are low carbing.

I either eat raw in salad or added to chopped tomatoes and other veg but add right at the end, once everything else cooked.

In a spinach and tomato omelette

spinach and potato curry is pretty good too

Spinach in a seafood and spinach lasagne is a lovely way of using steamed plain spinach

Raw in salad, and cheaper than most bagged salads.

I just had some at lunch, just put a puddingbowl full or it with a plate on top in the micro for a minute to wilt it, then added a bit of butter and salt. Was delicious with last nights cold sticky chicken pieces.

It's also nice in cannelloni, just added to the sauce chopped and raw before putting in the oven.

Wilt - just wash the spinach in a colander, shake all the excess water off it (but there will still be water on it) and then just shove in a hot pan until it just collapses a bit, for a minute or two.

I love spinach. I don't know any recipes involving oil.

My favourite is spinach daisy - no oil but lots of butter!

Spinach risotto
Salmon and spinach lasagne
It's good in salad with raw mush, parmesan shavings and garlic croutons.
