Stuffed Roasted Butternut Squash

Slice a butternut sqush lengthways into 2 portions and scoop out the seeds.
Place on a baking tray and roast for 20.
Meanwhile, slice a spring onion and 1/2 a red pepper (or 1/4 red and 1/4 green) and fry until soft.
Then add a handful of quorn mince and brown.
Add a squeeze of tomato puree and a squeeze of lemon juice
Mix together then spoon into the butternut squash. Grate over a little parmasan and bake until the butternut squash is soft (check by poking with a fork)

Serve with salad. Serves 2 (i.e. 1 half each) Yum

I forgot: fry in 2 teaspoons of oil.

Equates to about 8 PP's per person
