DH has lost weight before doing the Atkins plan, but this required some time in the mornings to cook a breakfast. He now has a very long commute and is gone early/home late. Does anyone have any good recommendations for losing weight without feeling hungry and being able to eat stuff that doesn't take ages to prepare. He walks to the station, but has no time to go to the gym/jo so it needs to be food based and he's rubbish at sticking to things if he's in a rush and hungry!

If you sign up to the Atkins website (it's free) they have loads of recipes for things like pancakes and muffins which you could make the night before and grab on the way out the door.

Pancakes

1 egg
1 tbsp grated parmesan
1 tbsp ground almonds

Beat all of the ingredients together with a fork and fry like a normal pancake, they turn out like American style pancakes and are nice with butter. I'm sure you could make them the night before and reheat or they'd be fine cold.

The muffin in a minute is quite nice too and again could be made ahead of time

1 egg
5g butter
30g of ground linseeds (I grind mine in a coffee grinder)
0.5 tsp baking powder
1-2 tsp sugar equivalent (I use stevia)
1 tsp cinnamon/ground ginger etc or 2 tsp cocoa powder

  1. Melt the butter in the microwave and beat with the egg
  2. Mix all of the dry ingredients thouroughly then mix in the egg
  3. Microwave in a coffee mug for 60 seconds
  4. Cut in half and eat with butter, cream cheese or clotted cream

Oh and here is a linseed bread recipe I've been meaning to try which would be good for sandwiches for lunch. Or some crackers from the same site which I have tried (a cup of ground linseed is 120g).

Oh, and one third of a cup of parmesan is 30g.
