Either roll the pork in a tsp of cumin, a tsp of ground coriander and chilli powder to taste then fry in olive oil or fry, remove from pan, add a small glass of wine, a few spoons of yoghurt/creme fraiche and some mustard. Reduce a bit then put pork back in.

  1. Heat a frying pan and spray with a little Fry Light. Brown the pork in batches for about 5 minutes until golden all over.
  1. Place the leeks, carrot, mushrooms, garlic, chicken stock, tomatoes, paprika and chile in a saucepan. Bring to the boil and simmer for 10 minutes.
  1. Transfer into the slow-cooker and pour over the contents of the saucepan. Cover with the lid and cook on 'high' for 5-6 hours or until the pork is tender.
  1. Taste and season with salt and pepper if necessary. Serve with rice and vegetables.

Ooh they sounds lovely thank you! I don't have a slow cooker but could put in the oven for a couple of hours instead if that would do.

Very inspiring thank you! Sounds yummy!
